If so has anyone tried it and how did it come out?** A: There is a recipe in the book that comes with it for all kinds of noodles, including ramen. I haven’t tried it yet though. **Q: Are there dough recipes measurements in ounces and cups not grams** A: Both measurements are included in recipes, it would be better for us in the USA if it was simply in cups but grams can be converted. **Q: Can you use your own recipes in this machine?** A: I don't see why not but you have to take into account the machines capabilities.This is great for a family of four for quick pasta. It doesn't replace the taste of hand kneeded rested and cut pasta but it great for a quick pasta and whole lot less of a mess. **Q: Can it be used with keto recipes such as almond flour?** A: I'm sorry I cant find where I put my recipe book that came with it. You might have to adjust the added moisture with non grain flours but I dont see why it wouldn't work if you're willing to experiment a bit with it. As for how well they would boil I don't know. Owned it less then a month and used it 12 times. All 3 plates work great. Home made soups, spaghetti and salads came out great. It does get too warm if you make more then 3 double batches(then let it rest for 25 minutes to cool down) in a row but since it is not a commercial unit what can you expect. Finally getting to the point of experimenting with different recipes and I haven't found one that comes out bad. Easy to clean and store. I will never need to buy dried pasta again. Easy to use add flour, egg, water and the pasta comes out. I have made fresh sphaghetti, and also used the ziti maker to cut short length to make Mac and cheese pasta. After researching a lot from options such as kitchen aid mixer pasta attachment to the Phillips larger version of the pasta maker I decided to try this out because of size (takes up less space) and price. This is all in one verses the kitchen aid attachment would require the dough to be made separately and then put through the pasta cutter. I also do have a manual hand crank pasta maker which requires too much work to first get the kitchen aid to make the dough then hand crank. This also have other extra attachment that you can make angel hair pasta, tagliatelle, and even lasagna. I purchased all the attachments. Best part of all this is easy to clean and reassemble together.
