Bit of science.  Of course it will if heated beyond its flash point.  Olive oil has a flash point of 437 degrees Fahrenheit. That means if you could heat olive oil to 437 degrees F, (225 degrees celsius).  it would give off a vapour that could ignite if a lit match passed through it.  Now the Jamie Oliver bit.  Olive Oil is not meant to be used for cooking beyond the point where it starts smoking, but that's going some.  Use rapeseed oil for high temp frying.  I always cook with it, fried eggs, meat, etc.
