Our twist cap reduces the need to repeatedly open up the bottle letting oxygen in. We've received acclaim from the North American Olive Oil council for the design and functionality of our bottle and how well it protects the oil. Regarding the plastic- it takes years and years for oil the break down the plastic bottle and effect quality. Even the best Michelin Star restaurants buy their olive oil in 3-5 liter PET bottles and then transfer it to smaller PET squeeze bottles (we know, we sell to them). The idea that olive oil is ONLY good in a class bottle is a myth and marketing tactic to make cheap oil look more expensive.

Olives are picked during peak harvest season when they are more mature and a bit juicier.13LBS OF OLIVES = 1 LITER OF OIL When pressed, these more mature, juicier olives yield a lot more oil. It only takes about 13 lbs of Picual olives harvested in December/January to produce the same liter of cooking oil.Just like (most) humans, olives get more chill with age. The oil produced from these olives will be milder in flavor, and make for a more flexible cooking oil.Because of its mellow flavor and higher smoke point, Sizzle can be used in a lot of different ways. Great for everyday cooking like roasting, searing, poaching, pan frying, baking, and marinating.

does anybody know if this product is cold pressed and unrefined? i got an answer with info from the label that does not answer my question.

cold pressed. the color is green and sediment-free so I'm pretty confident at least they carefully rack during processing but not sure how much filtering is happening.
