The usual exquisite sharpness from Global, but disappointing
I was accustomed to the GS-5 Global which I didn't realise has a slightly larger blade than this special edition Michel Roux JR's GS-83. The only reason I bought this GS-83 was to replace the GS-5 I'd lost and the fact that it had Michel's approval, a chef I respect, so I thought his touch would add to this style of vegetable knife. However whilst they are both exquisitely sharp as I'd expected from Global, the handle is disappointing. The blade is balanced with the handle but the handle is lighter and it's tale is thinner than the wider tale of the GS-5 so in my larger hands, it feels odd and unsecured. My index finger and thumb feels ok around the neck of the handle but the three remaining fingers have to curl round too far to be comfortable, whereas the slightly wider wedge shape of the GS-5 feels much more comfortable and secure in my grip. For me the handle is mismatched and a design too far from the classic feel of the larger Global blades. That said, my girlfriend who had never held a Global blade before, prefers the feel and handle of Michel Roux JR's GS-83. For me personally it's a disappointment, I had to buy myself a replacement GS-5. Wasn't Happy. ';-(

Excellent knife and service
Item came within two days of order.Global quality says it all.This is slightly smaller in length and handle width than the classic G5.I prefer this to the G5 that my brother has,he has tried this and prefers his.So personal taste in that regard, as I have seen some reviews with lower ratings based on this,which isn't really fair.

This is not an Usuba knife
This is not actaully a Usuba, for those that know the difference between a veg knife/ nakiri and a Usuba knife this is actually a Nakiri.An Usuba has a chisel shape edge; flat on one side, (which is what i was looking for) and the chopping experience is pretty unique at cutting veg compared to a Nakiri, the bevel on this knife is 50/50 which makes it a nakiriGood points:very lightvery sharp ( which is expected )

The perfect knife
I rarely even use any of my other knives any more. This one is the perfect size and balance. Good value, too, for a Global knife.
