Worth EVERY Cent....Changes Your Kitchen Experience...Professional Quality at a Reasonable Price
There are a lot of really poor knives for sale with fancy names and stunning appearance...but most disappoint. This knife delivers! A real kitchen only requires 3 knives...your chef's all purpose, a fillet knife and a paring knife. This is the ultimate fillet knife that is exceptional for fish and poultry. With a heavy handle the weight balance was a bit "unexpected" ... but not a problem. First big use was de-veining shrimp, which is a stress test for any knife. It was fast, precise and minimal effort. Next was 25 lbs of chicken breasts...slicing thinly and precisely. Again -- it was effortless and fast. After considerable use...no perceived change in the cutting edge...still razor sharp. Will order 3 more for other work stations...cooks rarely have an instrument like this in their bag -- time = money and you don't need someone who studied "le technique" to get results from this "instrument de cuisson"

Comfortable and holds an edge
Really like this knife and bought several spares. I love the feel and balance and it holds an edge very well

Great knife
This is an excellent filet knife. It's very sharp and is very easy to use. I sliced the skin off a couple of salmon filets and it worked great. I'm sure this will last a very long time.

Good Knife But Heavy
Makes very fine cuts with absolute ease; paper-thin slicing. It is definitely worth the price. It is a bit heavier in the hand than expected, but very ergonomic nonetheless. Ultra-sharp, and the very tip will stab right into your wood block knife holder or cutting board if you're not careful. Overall great!

Outstanding Quality
I have been a fisherman for more than 50 years and have gone through more filet knives then I can remember. This one is a keeper, sharp, sturdy, and made to last.
