The only downside might be that there is a total lack of directions so if you are new to this you may want to buy more of a starter kit or just be willing to do some reading online to learn what to do. The Modernist Pantry website was less than helpful (at least as of when I am writing this review) but there are many good resources out there. This is a good value.

Super easy instructions with specific measurements and the the sphere molds were the perfect size. I used the kit to make “egg yolks” with peach juice for a vegan dinner I did. I mimicked “beef tartare” and did “tomato tartar”, it came out Great!!!

**Q: Did your kit include an instruction booklet? The packaging on mine said it did but there wasn’t one when I opened it.**
A: While it has been a while since we used it, I am fairly certain that it did include an instruction booklet.   Is there anything online that you could download?

**Q: Please tell me the difference between reverse spherification and spherification sets ?**
A: Direct spherification adds sodium alginate to the flavorful liquid and uses a calcium setting bath and reverse spherification adds calcium to the flavorful liquid and uses an alginate setting bath. Reverse spherification is used for larger 'raviolis' and also any liquids already containing calcium.

**Q: What size spheres does this kit make?**
A: It is the size of the egg yolks no big no small just right

**Q: You forgot to give the amount (by weight) for each of the two "ingredients."**
A: They're 50g each.

Very nice kit. There is enough for multiple batches. The silicone tray works perfectly for making nice size spheres. The only downside might be that there is a total lack of directions so if you are new to this you may want to buy more of a starter kit or just be willing to do some reading online to learn what to do. This kit has pretty much everything you need to get started. If you don't have a syringe or small spoon, you may want to get one of those as well. The mold seems of good quality and makes for a nice size of modernist "ravioli." Would definitely buy again.
