Which one is the best?** A: The Hawkins is the best, by far. It is cheaper and easier to maintain because all parts are available for it. You could build a new one from scratch if you wanted to. The closure is much gentler on the gasket, so the gasket lasts longer. The gasket is a simple rubber ring that costs less than $5 to replace. The gasket is protected from the pressure cooker's contents by a lip around the lid. If you were desperate, you could probably substitute a greased-up leather shoelace for the gasket, because the design is so simple (although that would probably be dangerous to do in reality). Most modern pressure cookers are very safe, but their closure and locking mechanism is complicated and relatively fragile. The replacement gasket shown on this page, that you can buy as a bundle with this pressure cooker, does not fit this pressure cooker. Just ordered it, so I have one around when the current one begins to fail. The photo of the ill fitting Gasket I just purchased is included with this review. Got into using pressure cookers a couple of years back, when I got a Tower one of the same size as this one. Was all okay until it came to replacing the gasket sealing ring; they were out of stock for months on end, so I got in touch with customer services, who I can only assume took one from out of a cooker they had on a shelf somewhere. Anyway, it was as useless as an ashtray on a motorbike and by then we'd had enough ruined food from this thing that we couldn't be bothered with anymore dealing with Tower and simply researched Pressure cookers and found this one. A completely different design to the Tower one we had, that looked unlikely to flood the top of our hob, like the Tower one did when it was on it's last legs. Totally happy with this one, does a great job. Kept the old Tower thing to measure out the water content, because this one doesn't have fill lines but no worries, it just cluttered up the place for an extra week until I had measured out all the food types I use the pressure cooker on.
