Can these be assembled by hand?

Yes. I just dip the large end into the powder, shake and put top on. No problem.

Are these acid resistant?

I find them ok, I’ve been using these for over a year and not had any acid reflux from them, it’s like anything in life what works for one person might not for the next. Sorry I couldn’t be more helpful

Why are these listed as vegetarian ?

Capsules can be made with gelatin which is derived from beef. These will not have gelatin in them so therefore suitable for vegans and vegetarians. x
