The Senzo Classic Collection knives are made of stainless steel 33 layer Damascene steel with VG10 core clad with 16 soft layers on both sides. The incredible sharpness of these knives is long-lasting. Classic Senses are a little heavier than standard Japanese knives. The added weight is the result of the cold blade forging. The usual preform strength of the blank is 4 mm. This process, called the Tsuchime (hammer surface), gets the knife not only a great look but also prevents sticking the cut material to the blade. The knife blade is separated from the hardwood handle by a thin red heat-resistant ring that allows steel and wood to expand safely, shrink even under extreme conditions. Important warning: Do not use on bones or for any kind of twisting or leaning. Slice only on a wooden cutting board. Do not use a knife such as a screwdriver, can opener, or other purpose than to prepare food.
