Actually this makes superb fuss free batons
Contrary to some reviews here by seasoned bakers, the baguette baker works really well.The three photos attached show three batches I have made recently. I have used dried yeast dough and levain dough with approx 250g of dough to each mould after bulk rise and shaping. The sourdough batons were left in the mould with lid on in a bag overnight, for a slow final proving with excellent result. Otherwise I leave the dough in the baker for about 1 hour at room temp before placing In the oven. Absolutely no need to pre-steam the oven. The baker acts like a Dutch oven in that respect.However the first two times I tried the baker I used flour only to dust the moulds and got some sticking. I should have followed one or two other reviewers advice and grease mould with butter or Clover First, then dust with flour.Before placing in oven, spray with water, add poppy, sesame or whatever seeds you prefer then make 3-4 Long slashes with a lame. Bake for 20 mins at 425-450 *C then remove top for 5mins, finally remove from mould and leave for another 5mins just on oven rack at 400*C for perfect batons..I had my doubts about getting this baker, but so much easier than using tea towels to try and shape baguettes.Final baton is 36cm long so not a full length baguette but hey, you get 3!!

Superb Crusty Baguettes
Produces superb crusty baguettes even using the supplied recipe with a few amendments. The baguettes will stick if you don't grease the mould, I use clover butter flowed by a light dusting of flour and they pop out great. Once you have the baguettes out of the mould, turn off the oven and put the baguettes back into the oven, leave the door open a small amount and leave the baguettes inside to cool down. After about 20 - 30min take out and leave on a rack to fully cool. This technique always gives me a crispy crust

Very very disapointing! Results are poor at best and recipe for the baguette is complete crap.Save yourself some £ do not buy this.

I have made some lovely baguettes in this tray and I will keep on using it,the only thing I feel its over priced for what it is but it does the job so I didn't mind,if it breaks will I buy another don't know?
