Q: Could I remove the wheels, so as to give more space for the legs to go under a surface?

Yes you can. Just don't insert the wheels when constructing. PS. Don't use the screws that come with the assembly for the middle (cross) plate. Use bigger (From a hardware store) screws to make it more sturdy.

Q: Has this got a lip or something to stop laptop from sliding off

No, it doesn’t. I purchased this as a table for a family member with poor mobility. It’s a good buy though. You could glue some balsa wood or something to give you the lip you require

Q: What is the width of between two legs?

I dont know but you can get your legs under it with plenty of room. I've got rid of mine its not very sturdy.
