No, unless you prefer your creme brulee incinerated.  On creme brulee, the idea is to carmelize the sugars just to the point of a rich carmel color (which goes along, not surprisingly, with a rich carmel flavor.  This burnt sugar has been carmelized much more deeply, to a dark reddish-brown to black color and it's purpose is to give a strongly roasted flavor, similar to, but not the same as, dark roasted coffee or unsweetened chocolate.  In Jamaican black cake, it's a balance to molasses sweetness and gives the cake it's very dark color. It can also be used as a darkening an flavoring agent in gravies, if your pan drippings are not sufficiently browned. This has to be used a lil at a time until you get the color you desire to the dish that you are making at the time. Start with a little and add more if necessary.
