- Ceylon Cinnamon is also known as True Cinnamon, Canela, Sri Lankan Cinnamon, real Cinnamon, Cinnamomum Zeylanicum, Cinnamomum Verum. Unlike regular Cassia Cinnamon, Ceylon Cinnamon sticks are soft, with a light-yellowish brown colour and a highly fragrant aroma, rolled multiple thin strips of cinnamon bark and flake easily for grinding into fine powder or to add to curries or flavour rice, custards, even Tea. Also edible as is , probably a small piece.

- Properties: Ceylon Cinnamon Sticks are crumbly, mild, yet slightly sweeter with a hint of spiciness (clove and Citrus) and NOT hard like the Cassia Cinnamon. Also Cassia Cinnamon has high levels of Coumarin. If however you prefer the sweeter, smoother and easy to grind (won't break the mixer or mortar) Cinnamon for fine desserts and curry pastes, then choose high quality Ceylon Cinnamon.
