**Q: how does this come is it dried in a packet**
A: yes it's a powder in a packet as illustrated.  I will add that it failed to make a starter dough despite following the instructions to the letter.

A: It is rye based so not gluten free, though rye has much less gluten than wheat. My wife is gluten intolerant but can manage sourdough rye bread with no ill effect. There is something about the sourdough process that seems to help
