So far my ponds been fine but even big ponds will ice over if its cold enough. Put a ball that floats in it if it looks like it might ice up the wind will move it around which helps to stop the ice forming.

water lily! search for Lincolnshire pond plants, they have lots for sale :) you'll need aquatic pots, aquatic compost and hessian liners too.
