Amazing! Has a permanent place on my counter which means a lot in our home where not even a coffee maker is allowed on counter!
The media could not be loaded. This sharpener is the best I have ever had. I was so very tired of the little hand held jobs that only sharpened knives that still had a good straight edge and that were just somewhat dull. This sharpener took all my old dull knives and turned them into pieces of "Ahhhhhhhhhhh" to use! My serrated edge knife was so dull, I had to use the full routine on it of removing some of the metal with the sharpening blades, then using the strapping band. It was nothing but burrs when I took it from the drawer, but when I was done, it was smooth as silk and cut better than new!Another knife I have is thick and had a beaten up wobbly edge. Needless to say, it was dull city! A few time on the full routine and I am in love it with all over again. I was able to straighten the edge and put a super sharp edge on it. I use it quite often (at least weekly) for cutting raw semi-frozen chicken and the bones and it once again cuts thru it like butter. You don't realize how much time you waste trying to use dull knives and cutters. Cutting the 10+ pounds of chicken each time used to take about an hour or more because the cutter was so dull and had a hard time cutting up all the bones. Now I breeze thru it in about 10 minutes! I no longer dread the chore!I keep it on my counter and use it quite regularly now the moment I see a knife is not cutting as well as it should. Takes me all of 30 seconds to bring it back to perfection! We had so many knives, none of which had been sharpened correctly in decades before I got this. Husband flipped the first time he went to use one of our knifes after I had sharpened them all. I had warned him they were sharp so that he would be extra careful, but the first time he used one, he came running into the other room to tell me how he just cut a tomato like it was butter! I don't know who was happier - him or me!If you have seriously dull or wobbly edged knives, don't waste your money on lesser hand held or less feature models. You really need the features this one offers. We all have different angle knives (15 & 20). So many times the strapping band/honer feature is all you need to bring your knife back to life once you did a good job sharpening it. Using the strapping band instead of the grinder saves TONS of blade and metal and extends the life of your knives. The grinder takes off metal to form the edge whereas the strapping band hones the edges and removes the micro burrs that make a knife dull.Do read the manual. It is very easy to understand and grasp the concept of what goes where, when to use the 15 degree, when to use the 20 degree and when to use the strapping band. I chose this manufacturer over another similar product that was less money as this one had double the warranty. I figured that if I was going to put out this much cash, I wanted all the warranty I could get.Would I buy it again? You bet - in a heartbeat!I hope this is helpful to those considering purchasing a knife sharpener, especially this model in particular.

Simple and works
I decided to try this item out as it got good reviews on the internet. I am not trying to sharpen my cutlery by learning angles, honing stones, and the rest of that nonsense. I will leave that to the professional cooks. I ran my steak knives and cutting knives through the Chef's Choice, and it gave back a sharpness and life to those dull utensils. I am pretty impressed. There was a feel you get when you are in the grove and the device is doing exactly what it is supposed to be doing.

I did not have to break the bank to purchase a very efficient knife sharpner made by a top-of-the-line company Chefs Choice.I did my research and decided I did not need your most expensive knife sharpener the mid-grade priced item would be adequate for my needs.I could have purchased cheaper ones but the reviews led me to purchase Chef's Choice model 1520 and so far i have no regrets. You get 3 years manufactor warranty with the product. I called the company before I purchased the item to make sure of the factory warrantyWhy did you pick this product vs others?:I picked this product because I was tired of using the knife sharpening stone so often. Very time consuming!

Excellent knife sharpener
I have wet stones, sharpening sticks and several other options to sharpen knives and I am pretty good at all of them. But once in a while you just want to sharpen a knife quickly. This works very well, I have used on some kitchen knives and a couple pocket knives. I would buy again, if I would ever need to replace this unit.

Excellent Sharpener (with a concern or two) BUT NOT FOR CERAMICS
Received this July 24th 2014. Couldn't wait to test out the 1520 on some of my knives of yesteryear. I have knives from graduate school, when I was a young pup, which could have been used as spoons- very glad I hung on to them. I have a Chicago cutlery 7 inch knife that was in this category and is now almost as good as my Global G-46 (oh! And btw if you want a knife that is truly outstanding and will be squabbled over by your heirs it is the G-46 - another review for later!)The 1520 worked wonders on the knives that I sharpened. Took about 30 minutes for 8 knives (after I had read through the instruction manual). I started out by trying to cut a piece of printer/copier paper - the Global G-46 knife which is about a year old and the massive Lamson-Goodnow knife were able to cut the paper. I also used a plum (no tomatoes). Only the G-46 was able to cut the thinnest slice off the plum. A couple of others could cut thicker slices and some couldn't cut through a plum without crushing it significantly! The goal with a very sharp knife is to get me a slice off a plum (or tomato) that is thinner than a sheet of paper. At the end of this first foray into knife sharpening every single knife I sharpened with the 1520 could cut the perfect slice off a plum.A very good product with a minor issue! More about this at the bottomThe device is "assembled in U.S.A". Not sure if that is a euphemism for packaged in a box here in the states! Comes with a 3 year warrantyA couple of provisos: you CANNOT sharpen ceramic knives or scissors with this.The instruction manual is well written and lucid - a rarity in our age. It may be available on their website (can't link to one for you - amazon deletes the link!).There are six grooves, in three groups, that are available for sharpening knives. The first group is for Asian knives (like the Global G-46). The second is for American and European knives. The last group is for the final honing and polishing after you are done with group 1 or group 2.Each group has two grooves. Think of each groove as a v shaped piece of plastic you put your knife into and pull through. Most knives have a left side of the blade and a right side. You alternate between the groove, first pulling through the left groove and then the right, within each group.I took the Chicago cutlery knife (mentioned earlier) and decided to try and convert it into an Asian blade (If you look at a knife as you are cutting something, the very top of the blade is blunt and thick, the sharp edge forms the bottom and tapers. The taper is 15 degrees for most Asian knives. American and European knives have a 20 degree taper. Asian blades tend to be sharper but thinner because of the difference in the taper.) In about 5 minutes it was razor sharp and now had the 15 degree taper. I was frankly very surprised that I got the perfect edge where none had existed for over 14 years.A negative: The grooves are plastic and I found that by the time the knives were on the honing wheel they were cutting into the plastic that forms the wall of the grooves. The actual sharpening occurs in the valley of the groove and there is no plastic there. Still I had to be careful when inserting the knives into the grooves so as not to keep cutting the plastic as I pulled it through.You may want to do a search for Chef's choice 115 as well - not sure if it offers the two different knife type options (Asian & European).
