Yes, you can use it just avoid coconut milk with the highest fat content and without preservatives

The traditional milk is cow`s sheep`s and buffalo`s and they deliver the best results in terms of texture and traditional taste. The camel`s milk contains a very low amount of fat and the texture could be liquid. However, the taste is a bit different and if you do not mind the liquid texture please go ahead.

You mean mesophilic. Yes, this and (most) all yogurt cultures are mesophilic. Optimum temperature for yogurt fermentation is about 108-112 f.
