Holds up & great macros
I will definitely be purchasing this again. It was quick to cook, solid enough to hold its shape after cooking and wonderful protein and fiber. I did wash with cool water after cooking as recommended. It was dense in texture but I would expect that with the fiber. But the flavor was good and I really enjoyed it in my vegan cream sauce. Also I stomach felt fine and no bloat during and after eating it. Win Win!!!

Very dry and gummy,won't order again. Got a three pack,cooked one and tossed the other two.

Easy to use
It's expensive, but well worth it. Easy to use. Great for KETO. Tastes okay with sauces. Sauces stuck to the noodles, as compared to some keto-friendly noodles which are too slick for sauces.

great macros, acceptable taste, so-so texture
I purchased this pasta, like I'm sure many do, while pursuing a keto or low-carb diet. And like many keto substitutes for pasta, bread, or other carbs, it's fine, and scratches the itch, but misses the "yum" factor that makes regular pasta so delicious. I tried cooking three different ways: boiled al dente and served with a simple oil and garlic sauce (aglio e olio), boiled shy of al dente and then mixed with a tomato based sauce, and then cooked in a casserole with sauce and cheese. Of all those, the casserole was the most successful (I used Melissa Clark's Cheesy Baked Pasta with Sausage as a base recipe). The flavor is OK, but the texture is kinda mushy/mealy no matter how it's cooked, and it tends to stick to your teeth like paste. Final note: it's a BEAN-based pasta, with all the "musical" notes associated with that. Surprisingly great
I was recently told that I am prediabetic and have begun wearing a full-time glucose monitor. I have made it a game to see how foods affect my glucose levels. I tried this pasta with some chicken and pesto and was very surprised at how good the pasta was. It’s not like when I made fresh pasta at home, but it is very good and doesn’t have the weird gummy texture of some of the other pasta alternatives. Also, it did not spike my blood sugar at all and kept me very full throughout the day. I highly recommend this product. I know it’s a little pricey, but it is worth every penny for me given that I really can’t eat regular pasta anymore.

Not a fan
I really did try to like this pasta, had no expectations for it to taste like regular pasta. Tried it twice with two different dishes and the texture and taste was bad. I am not even sure if I overcooked it. The one time I wish i’d listened to the bad reviews.

Low carb, but at what cost?
It wasn't the worst low carb pasta I've tried, to be fair. But it was a bit... Crunchy. Even cooking to directions, it felt way underdone. And upon additional cooking, remained too crunchy until the moment it turned to mush.If you can't do resistant starches, it's a fair option. It scratches the pasta itch, somewhat. If you can manage resistant starches (my diabetic partner and I can), Carbe Diem is king.

Great Pasta Substitute!
I bought this based on reviews by Steve at Serious Keto. He made a pasta dish with this penne pasta, some Italian sausage, Rao's Marinara sauce and ricotta and mozzarella cheese. It had a lasagna taste and was so good! It filled a 9x13 pan and we divided it into 6 servings. My mom and I each ate one portion and my son had two. He took the rest home for leftovers. Everyone loved it and can't wait for me to make it again. I do intend to try it using the rotini next time. I think that would be good too. I cooked the pasta following the directions on the package. After rinsing I mixed it with everything else. I don't think anyone could tell it was a lower carb pasta. I have tried many but this is one that actually tasted good. There's no point to eating something "healthy" if it doesn't taste good. Wish I would have taken a picture of it.
