The others have flat surface like a frying pan.And they came at different times in the order: flat - with edge well - flat.Both work, more or less, the same. I seem to prefer the flat one for most of the cooking I'm doing in them. I don't think you have a choice in buying one or the other. The last one - flat- I only got last week. **Q: Do u get cookbook??** A: Yes you do get a cook book also this will be the best investment to your kitchen cook ware that you will ever purchase, I use mine just about every day. I take a frozen hamburger patty cook it 4 minutes on one side then turn it over and cook it 2:30 to 3 minutes and it is perfectly brown on both sides. I would buy the round one instead of the oblong one. There is no limit to what you can cook in it. I love mine and would tell everyone to buy one. Shop around and compair prices. **Q: I am new to this. Will it crisp better without the lid?** A: We highly recommend you use the lid when using the Microhearth. Great char on my steak *by M***A on Reviewed in the United States on 21 August 2019* I love this little innovative microwave cooker. It gave me great char on my very expensive steak. Plus - clean up was easy. I'd gotten another variety with a copper bottom and it was horrid as it was impossible to clean after the 3rd or so use. Not so this little gadget. It cooked my steak perfectly and cleaned up like new. If I may also point out I had a tiny hiccup (not worth mentioning), contacted their customer service and they got back to me within MINUTES. Seems like good quality. Steams veggies fantastic! Fries bacon without the mess. Makes awesome pot stickers. It did NOT make a good steak as too much liquid accumulated and it was more 'boiled' than grilled.
