There is no significant nutritional difference between california almonds and spanish almonds of the same variety. As to pasteurization, the US law mandates it ONLY for almonds shipped to US customers. For consumers outside of the US the almonds may be shipped unpasteurized, provided that this is clearly stated on the label. The almonds we use have not be pasteurized.

What country do you source your almonds from please?

In most cases they are from the USA, California. We also use Spanish almonds.

How long does this last once opened?

A t least a month. I usually decant into small glass jars for easy use. Never had it long enough to be anything other than fresh
