Im surprised no one asked this question. It says it doesn't go over 158° recommended temperature of poultry is 165° How do you cook chicken in it?

According to the famous cooking book "Sous Vide for Everybody", the best temperature for poultry is 150F, for tender steaks is 126-134F. So, you can choose any temperature till 194 F.
