Hatcho is the best & strongest miso for cooking with.....thatβs my β60 years of using misoβ tip....
This is a very good no nonsense pure soya n salt n koji miso. The best/strongest for adding to soups, stews etc but probably a bit strong for spreading on toast or crackers.....best to use shiro, mugi or genmai. Milder and less salty and shiro ( rice) is almost sweet.
