Works great! Very easy to use. Made a gallon size plastic bag of pasta in about 15 minutes.

This is a winner
This is a great device. I used a recipe of 3 eggs 3 cups flour 1 teas kosher salt 1 lb fresh Ricotta I mixed in a food processor with a dough blade until is was smooth and elastic. I rested in the fridge wrapped in plastic over night. Divide dough into fourths. Divide again one of the fourths into fourths and roll into snake coils about 3/8th of an inch thick. Flour each coil well and feed into the Cavatelli maker powder the Cavatelli with flour after each coil is put through the machine. Boil in salted water until they float usually about 2 to 3 min. Drain and serve in a sauce or butter and parm. DELICIOUS!!! I bought this Machine on a whim as I saw one in a cooking demonstration. It was so good I can't wait to do it again! This would be a fun project for a dinner party.

Title: Disappointing Experience – Missing Parts and Poor Functionality I was excited to try the Fante's Cavatelli Maker Machine for Authentic Italian Pasta, especially given its long history with The Italian Market. However, my experience was far from great. When I opened the box, I immediately noticed that some parts were missing. I was unable to assemble the machine properly, which completely ruined the experience. I tried contacting customer service, but the process has been slow and unhelpful. Additionally, even after I managed to use the machine, it didn’t work as expected. The dough didn’t come out right, and it was difficult to handle. The quality didn’t live up to the reputation or my expectations. Overall, I'm extremely disappointed with this purchase and would not recommend this product to anyone looking to make authentic pasta.

That Mushroom Cavatelli though...
The recipes they include are amazing! This pasta can react differently based on your humidity levels, elevation, etc so you may have to adjust your flour/liquids. So many times the dough was too sticky. Then you have to do it in a rhythym to get it to look the best. Not for a beginner to pasta making. Even pros can be humbled.

There's a learning curve, but it works!
Not necessarily the easiest device I've ever used in the kitchen, but having experimented with our dough a little bit, we've definitely gotten it to make cavatelli! I returned a CucinaPro cavatelli maker that came with plastic rollers, which the dough stuck to terribly. Haven't had any issues with the dough sticking to the real wood rollers on this one! Unfortunately, no matter what we do, the cavatelli are coming out a bit tough; hopefully a bit more experimentation will yield some that are a bit more tender. So far, a medium-firm dough seems to work the best- too firm and they don't curl over nicely; too soft and they don't separate completely and end up sticking together and getting clumpy. Coating your dough snake in semolina seems to help the cavatelli drop off when they're made. We have had a few stick to the rotating metal bits if we don't coat the dough in semolina, and if they go all the way around they can gum up the rollers a bit, but they're pretty easy to peel back out. Anyway; this cavatelli maker works far better than the CucinaPro did, and we will definitely be keeping it! Once we got the dough and the rhythm down, we've had a blast using it, and it's actually way faster than rolling out and cutting pasta dough, so it's a great way to have homemade pasta on a weeknight when we don't have as much time to cook.

Simple to use
This is a game changer. I used to do cavatelli by hand. This little machine cuts time to a fraction. It’s enjoyable to use any time now for fresh pasta. TIP- use flour liberally and it will not stick and jam up the machine!

Works flawlessly once you get dialed in!
The machine came with a recipe for ricotta pasta and a mushroom thyme sauce. Made them both tonight and they were excellent. The only tweak I would recommend is the machine instructions recommend using a half inch in diameter rope of pasta to feed into the machine. This would cause the machine to spread the pasta into the sides and gum up the works. I’d recommend using a smaller sized flat rope starting at about maybe 3/8 of an inch and flattening it out before you feed it into the machine.This would give the machine space to spread the pasta across the blade without gathering up into the sides. And of course, you flour the hell out of everything to make sure nothing sticks. Would definitely recommend this to another pasta enthusiast.

I want to like it
Price point is nice, however the nut that comes to hood the handle onto the crank shaft will not stay on, you have to re tighten every 45 seconds of use. I wish that were an exaggeration but it’s not. Very frustrating. Used recently for an event, the pasta produced is great, shape is on point and all that but I think the busted knuckles from the handle loosening pretty much have made me decide on not really enjoying this product.
