この際思い切って購入しました。 重みもちょうど良いし 良く切れます。 でも、ちょっと刃が怖い 慎重に扱ってます。今まで これは冗談ですが 人なんて○○せそうもない包丁しか使った事なく これは... そうな位 すごいです。 メンテナンスもあるみたいなので生涯(私の年齢では行けるかも)大切にします。

以前までは文化包丁を使用していたので、牛刀包丁というものは初めて購入致しました。 使い始めこそ、重さや刃の幅の違いなどで、 文化包丁と比べて違和感を感じましたが、慣れてみると、それが逆に使い勝手が良い。 野菜も肉も果物も、これ一本で調理できますし、今は、料理をするときはいつもこれを使用します。 お値段はそれなりにしますが、私は、購入してよかったと思っています。

ペティナイフを先に購入し使っています。 とても切れ味が良いので押し切りも出来る牛刀を使ってみたいと思い購入しました。 三徳より使いやすいと思います。 鶏肉を切りましたが、今までの包丁は何だったのかと思うくらいスッと切れてストレスフリーでした。 研ぎ直しやシャープナーの購入をオススメされているので、使っているうちに切れ味が落ちてからのかなとは思いますが、ペティナイフと共に大切に使っていこうと思います。 刃渡りは18センチで正解でした！

長さも自分の思った通りだったので、通販で買って正解だったと思う。非常に満足している。

調理をしているときの手触り、切れ味ともに最高でした。 二ヶ月後、切れ味が鈍くなってきています。

高価なグローバル ステーキナイフ & フォークセットなので、長い事、欲しい物リストに入っていて購入に時間がかかりましたが、皆さんのレビューを見て決心して買ってよかたです。お肉がスパッと切れるので、舌触りが良く、肉の断面がザラザラせず、肉本来の味がよりハッキリわかるようになり、今までより何倍もお肉がおいしくなりました。切れ味が半端ないので、追加で、グローバル ステーキナイフ & フォークセットを４組セット、１８センチの牛刀、ペティナイフを購入しました。肉、魚、野菜、何を切っても素材の質を際立たせてくれる切れ味に感動しています。

Fantastic knife, using it for 1 year now and it is very good, bought the same for my Dad and he is happy as well.

Got this for my lady. We gave her son one for Christmas and she loved the look/feel of it. We have a lot of kitchen knives - Japanese, German, American, Chinese, etc. and while we probably have about 3 chef knives of this length, I have to admit that this one does have a very nice feel to it and is super sharp out of the box. If you are looking for a well-balanced "premium" knife that won't break the bank - this could be your ticket. For those "steel junkies" out there, I too can appreciate a high carbon steel but for the average daily user, I think this steel will more than suffice and be a lot easier to maintain.

Couteau de qualité, belle fabrication, beau tranchant. Il ne me convient pas personnellement pour deux raisons: 1. L'arrière de la lame fait un léger crochet vers l'arrière, je me suis blessé deux fois car j'ai trop l'habitude de couteaux qui n'ont pas ce "talon". Je n'en comprends d'ailleurs pas trop la fonction. 2. L'écart vertical entre le bas de la poignée d'une part, et le fil de la lame d'autre part, n'est pas assez grand pour moi, du coup je n'arrive pas à manipuler le couteau de façon confortable quand je hache des légumes ou des fines herbes. J'ai découvert en comparant ce (très bon) couteau avec d'autres, qu'un couteau de type Santoku est ce qui me convient le mieux.
