At first, my brewing process was espresso pot....slighly sour in the palate finish. So I tried my pour over, same issue: a bit harshness of the roast was coming thru. Finally, my Bialetti glass coffee press, produced great Sulawesi coffee nearly perfectly balanced, nutty, round coffee flavors similar to a good Colombian whole bean. Hint: grind on Medium / fine; “burst” the beans in 1 oz. of hot water for 1 minute prior to filling the press with boiling water; and gourmet’s tip is make a blend of central Am. to African or Indonesian beans to make a pleasing blend, reason: brewers secret is that Indonesian are often complemented with a mix of 1/3 central Am. beans...Enjoy!UPDATE: tried a bag of Papau New Guinea from this roaster. Excellent, well rounded. My new fav. Superbly roasted.
