You don't need to worry about interference though length is matter. A digital signal consist of 1 and 0. Transmitting end sends digital signal (1 and 0) and receiving end receives digital signal and convert into analog signal(i.e sine wave). So, extra shielding not needed here. If you looking for good sound quality then you go for any cheaper option. Quality will be same. Though extra shielding, thick rubber insulation can protect fiber strand from harsh mechanical forces. And this cable has a good thick rubber insulation. One thing I think worth mentioning that TOSLINK is based on S/PDIF(Sony/Philips Digital Interface). It first came in 1983. It is a very old technology for Audio CD PCM streaming. It doesn't support lossless format, due to it's bandwidth limitation.
