This is my first try at outdoor dehydration. On my first round, I tried drying some tomato skins, which were a byproduct of extruding juice and some cayenne peppers on a different shelf. I ended up with tiny bugs in my tomato peels, and I would first say the mesh needs to be smaller, but in reality the bugs were so small I don’t think it could be prevented. You really should dry in an oven at low temp or use a food dehydrator for safety concerns. I myself made jerky for dog treats in an oven and I ate some myself it was delicious. I recently bought a food dehydrator there are just too many wild cards drying outdoor in the sunlight. I myself would NOT risk it. I will tell you however for the sake of answering your question that this would not be ideal for drying meats. Too light weight and too many levels which would decrease access to sunlight. This worked for me for our garden herbs and onions and garlic.
