Rufus Teague rubs are my favorites, and the steak rub is no exception.
I have been using the Rufus Teague rubs for a couple of years, and love them all. I use the steak rub on beef and bison steaks and roasts. You have to keep in mind that rubs and seasonings have different uses. Rubs are meant to be sprinkled on generously before cooking and left on the meat for a period of time. I generally refrigerate the meat overnight in a baggie to give the rub time to marinade the meat. This not only flavors the meat but also tenderizes it. Piercing the meat after applying the rub helps it to penetrate the meat. Seasonings, on the other hand, are generally used for meat that is to be cooked almost immediately and are not used as marinades. Examples of these would be the Montreal seasonings which I also love. What is great about this steak rub is that it can be used as a marinade, but also works very well as a seasoning. The steak rub is much more granular than the meat rub as the meat rub is much finer and is meant to be used as a rub. This Rufus Teague steak rub is great for steaks whether you take time to marinade or not. It can't be beat for roasts or even short ribs whether you roast the meat or pressure cook it. If you marinade the meat overnight and pressure cook it, you will get the best gravy you have ever had. For spare ribs, I most often use the meat rub and let them sit in the refrigerator overnight. This rub is also wonderful when using the sous vide method of cooking a roast. Simply sprinkle this rub generously on the roast, put it in the bag and seal it. For a rare to medium rare roast, I sous vide a bison sirloin roast at 130 degrees for 12-15 hours. It always comes out so flavorful and so tender you can cut it with a fork. I hope this review was helpful for you.
