Leave It To Cleaver
What a beaut. I really admire the hammered look of this cleaver & how razor sharp the blade has remained. Typically I prefer using the other Dalstrong knives for prep work or the use of global knives, but I find that I'm drawn to using this for slicing veggies or cutting sections of meat. My wife & I have been putting it through the ringer & I have yet to break out the whetstones to sharpen it. I actually prefer to use a ceramic sharpening rod to keep the edge sharp instead of using a steel rod. The ceramic, upon my experience, removes more material & makes maintaining the sharpness much easier. The cleaver has the right amount of heft so you can bring it down with force to dissect a chicken & manage a firm grip around the handle while doing so. Beautiful piece of craftsmanship & is highly functionable for everyday use in the kitchen. Very pleased with our purchase.

A lot of fun to use, great for veggies and boneless meat
Pros: When people like the Brothers Green talked about how great cleavers were, I didn't know just how great until this knife arrived. This is a really sweet knife to use for chopping large and small vegetables alike. For the large ones, having a very wide, straight edge for a consistent cut angle is really nice. And scooping up a ton of chopped veggies onto this big, honkin' blade before throwing them all into a pan or salad bowl was even more satisfying than I had anticipated. "Cons": There was a small issue with the blade grind, but their customer service promptly fixed it. And despite having a wider grind angle than advertised, it still cuts very well. I used this cleaver to cut a bunch of boneless pork, and this cleaver sliced right through all of it like a champ. Also, I think the wider grind angle for a knife this heavy is a good call anyway. But yeah, these are the only two nitpicks I could find. If you're going to be cutting through bone, I'd get one of their German steel cleavers. Otherwise, get this knife and enjoy using it.

Fantastic Cleaver
This is an amazing Cleaver. It comes in a wonderful solid, well made gift/keepsake box. The Cleaver itself is strong and sturdy. The Cleaver chops vegetable, fruits and meat very well. This cleaver makes prepping for dinner much faster and more efficient. The Cleaver is top quality. Besides being very beautiful the cleaver works very, very well. The Cleaver is easy and comfortable to hold in your hand and chops every item I have tried very quickly. The Cleaver is nicely stored in the shield case that comes with it, this keeps it from getting banged up and an extra layer of safety when not in use. I would highly recommend this Cleaver it is the best I have ever had.

Great Knives

Do's and Don'ts with these knives...
Just a few recommendations of things to do and not to do... Handwash these knives, all of them. ONLY handwash these knives. Don't put them in the dishwasher. If you have put your knives in the dishwasher before and think you've gotten away with it and they still look just fine please don't do it. Dishwashing detergent is both corrosive and abrasive. How do you think your dishes get clean in there? Liquid dishwashing detergent is terribly corrosive and powdered dishwashing detergent is very abrasive. It's fine on dishes but don't put your nice new steel in there or eventually you will find its limitations. It will damage your blades bit by bit every time. Hand dry these knives, don't leave water on them to air dry, it just tempts fate. They aren't made of eggshells, I know, but hand dry them well then put them in your chosen storage. Don't hack bones with mini cleavers, they aren't designed for that at all, you will damage the blade. These blades are very hard but that hardness is designed to hold an edge for an extended period of time, not for impact, and hacking a bone can cause a crack. All tools are to be used for their intended purpose including kitchen knives, which all have specific intended purposes. This mini cleaver is a multi use knife but still has intended purposes such as boneless meats, cheese and vegetables. Use a full size cleaver for hacking chicken bones., etc. Keep a sharp edge on your knife. The only thing in the average kitchen more dangerous than a sharp knife is a dull one. It's easier to hone a razor edge on an already sharp'ish knife than to sharpen a dull blade. I would recommend one of those Bavarian "sail boat" shaped knife sharpeners to help the average cook do that. They are inexpensive, easy to store and quick to use for literally anybody. Sharpening stones are significantly better but have a much larger learning curve and are time-consuming. A sharp, long lasting edge is literally why you purchased these knives anyway isn't it? Taking these simple steps might allow you to give these knives to your kids someday, because these are built really well for the price offered. I use this mini cleaver more than any other knife in the kitchen, it's my go to thanks to the design. Enjoy and stay safe...

Cool little cleaver
Knife was super sharp out of box no chips. Handle was smaller then I'm used too my hands are pretty meaty all in all Great knife for the money

Most Versatile Knife In My Kitchen
Thick strong blade sloping down to a thin, keen edge. The high handle and a point at each end of the blade allows the knife to be rocked leaves no portion of the food, like, say, a big potato, unexpectedly attached. I've found that the slightly uneven surface of the blade, makes it nonstick. Best at cutting on a flat surface and not so good for carving. This is a knife you can admire for it's looks and craftsmanship. The one-piece construction of the blade, bolsters and the pommel are superb. The layered steel blade of two stainless alloys is beautiful as well. And the G10 handle slabs are probably the toughest and most practical available. I enjoy cutting up food with this knife. For me, it was well worth the price.
