Q: how do I transfer cider juice from demijohns when the demijohn necks are too narrow to insert the filter?

Take the filter off and bend the end of the tube and tie in place, I used to tie a bit of stocking over the end to use as a filter. You have to keep this above the sediment. I do find that the fujie filter does just fit through the necks, but my demijohns are over 20 years old. Going back a few centuries they would just filter the juice through straw and call it Scrumpy !

Q: Can this be cleaned in a dishwasher?

No you can't put it in the dishwasher. You are better to run sterilised warm water through it.

Q: What is the highest temperature liquid that can safely be siphoned?

I'm no scientist but I syphon my home brew beer at about 20 degrees.

Q: If using this to transfer beer to a bottling bucket will there still be enough yeast on the bottled beer for 2nd fermentation?

Yes, there will be lots, even though you wont see it ! You dont want so much yeast that it is visible. Only minute amounts are necessary or desirable. The taste of yeast in any quantity will ruin the flavour of the beer (or wine , in the case of genuine Champagne). Get your beer as clear as you can by decanting or "racking" before you bottle : you only want enough yeast to produce CO2 gas to make beer fizzy.
