I could probably live exclusively off those recipes, but she’s such a warm, welcoming person that I would have spent twice as much on this book just to support her.

This is an excellent cookbook, which offers vegetarian Indian pressure cooker recipes, paired with suggestions to make it vegan as an alternative. The recipes are a good balance between easy and quick versus complicated but delicious. Everything tastes great that I’ve made so far (about half a dozen recipes), but the recipes are approachable enough to cook dinner quickly during the week without having to scour the earth for ingredients and spending 2 hours prepping. I can now walk in the kitchen with my head held high
I am a know nothing Indian kitchen ignoramus, who got tired of getting nagged by his wife and in-laws about his lack of culinary skills. In short order, this book and the Insta Pot have helped me silence my critics, chief among them being my otherwise beloved wife. This book is emancipation for the harried male, a veritable Rosetta Stone that helps unlock the mysteries of how to cook an acceptable Indian diner. The greatest difficulty you will face is assembling the ingredients, which can be remedied by a trip to your neighborhood Indian grocery. The directions are very clearly laid out and tough to do incorrectly. Trust me, if I can successfully prepare this book’s tasty recipes, so can you. Update: it's now been a few months, pretty much tried everything, not one recipe disappoints. My go-to book for Saturday night cooking. Highly recommended for non Indians who want to try their hand at preparing Indian food that is a lot better than the garden variety restaurant fare -- and much less expensive, too! For those new to Indian cooking, I would recommend that you reduce by half any recommendations for red chillies or chilli powder.

Tasty, if not necessarily "easy" recipes!
Have been enjoying Manali's blog, and was delighted when she confirmed that she'd written a book. The recipes have quite a number of ingredients, many of which require some prep. So, no, this is not really a "just toss stuff in the pot and push 'go'" kind of book. But the ingredients make sense, and are very well worth the effort. The flavors are well-balanced, and not super-spicy; spice levels are easy to adjust "up," to taste. Unlike some reviewers, I REALLY appreciate that many of the recipes are scaled for two people; this single person would not really want endless leftovers, no matter how delicious the dish. ;-) Plus, the smaller quantities can be made in the 3qt pot. I also really appreciate that Manali includes notes to veganize many of the recipes; I'm not vegan, but that's a nice "extra." The photos are lovely! (Brava on your photography skills, Manali!) Am giving it four stars instead of five simply because, yes, the index is a bit wonky and hard to follow. And there are just 75 recipes. And I'm not terribly interested in the desserts; but that's just me. Made the spinach dal for dinner tonight: YUM!!!!

Awesome recipes and a lot of fun to cook.
I bought this cook book after following the author's website and trying a few of the recipes she posted online. So glad I grabbed it. I've been eating vegetarian ever since and am learning that I really never liked meat to begin with. I always just ate it for the protein as I enjoy working out etc. and thought that a diet high in animal proteins was necessary. I'm finding I have a lot of energy and just generally feel good. The recipes are delicious and extremely healthy (most of them). I will say that you will need to grab a lot of ingredients to begin with but once you have them you're set as you'll use a lot of the same things for each dish as far as spices go. I love putting on some music, having a drink and digging into these recipes. Make it an event with your significant other or just by yourself and enjoy the amazing smells that circle your house. Again, I highly recommend this cook book.

Best Source for Indian vegetarian cooking with the Instantpot.
I have been following Manali Singh for some time on Instagram. The recipes I have tried were always delicious and Instantpot easy. I was very excited when she announced she'd be coming out with a cookbook, and happy to see how beautiful it was and full of wonderful ideas for Indian options for our table. The recipes are well written, easy to follow and the art work is superb. I tried two recipes over the weekend, both with excellent results (pictures attached). If you love your Instant, you'll love Vegetarian Indian Cooking With Your Instant Pot. Strongly recommneded.

Not quick or easy recipes
As an Indian and a life long vegetarian, I was so excited for this book and preordered it, but was pretty disappointed. There are a lot of recipes, but they are overly complicated. They also assume you have all the accessories to the instant pot and that you have a certain size. For example, the cheesecake one basically has you put a pan inside the instant pot, meaning you have to one large enough to do so. There are several others that require things like steaming racks. They are also kind of hard to follow because the directions are in paragraphs versus numbered steps. I was looking for quick and easy vegetarian Indian recipes and most of these have steps outside of the instant pot or require prep (like soaking lentils fours hours in advance). I was hoping this book would cut some of that out (as I've seen done in other Indian recipes). Again, good variety of recipes but just not what I was looking for, the "quick" and "easy" part of the description is very deceiving.

Easy and delicious recipes
I am so pleased with this recipe book. I’ve made 10 dishes so far and really liked them all. As with all Indian recipes, lots of spices are required, so if you don’t already do a lot of Indian cooking, you may have to take a trip to your local Indian store for dry goods. More than worth it!

Great recipes that are quite simple with tasty authentic results

I love three things best about this cookbook. 1) vegetarian food; 2) Indian food; 3) all instant pot recipes! I'm not Indian but live in a multi-cultural city so have a keen appreciation for Indian food, especially since so many restaurants have excellent vegetarian options. But that was where I most often had Indian food: restaurants. So far I've made 7 different dishes from this book, and loved them all. I will certainly be trying more in the weeks to come! There are some more interesting dishes I'm not sure I'll try, like Masala mac & cheese (I just love my own mac n cheese too much), but I do have my eye on the Paneer Lasagna! I haven't had issues with the cook times as mentioned by someone else. I follow the instructions and everything comes out perfect! You can be assured that Manali has tested all her recipes and has been diligent about measurements and clear instructions. She also has tips for most of her recipes on how to make it vegan, if it isn't already. Even with my pretty large spice collection, I did have to go out and buy new spices, and find different varieties of dal, or lentils, which was pretty easy in my city. But I've also bought spices on-line in the past, so that's an option if you're in a smaller town. There are a couple of recipes where you'd need accessories that you might not have, like a 7 x 3" springform pan for the Rose Pistachio Cheesecake, but the vast majority of them just use the plain old instant pot.

Gorgeous book full of mouthwatering pictures. I don’t have an Instant Pot but do have a Tefal Turbo Multi Cooker which is very similar. The recipes in the book work equally as well with a couple of simple adjustments to suit the Tefal’s operation. Really easy recipes to follow and every one delicious. No special ingredients needed as the majority of spices are readily available in major supermarkets. Those that aren’t then Amazon stock them. The book even gives you simple ingredient swaps to make the recipes vegan. I have made something from this book at least twice a week since buying it. Definitely going to attempt the Rose and Pistachio cheesecake because it looks and sounds delicious. If you love vegetarian Indian food and have an Instant Pot or other similar kitchen gadget then this book is a must!

Some of the recipes contain too much liquid. Might be because the potato-type is not specified (red potato has more starch than lighter colored) and that determines the potatos ability to bind the stews together. That is about the only critique I can offer, so needless to say: this is a very good cookbook which we enjoy using with our Sage fast slow pro pressure cooker. Good to make 2-3 dishes when you have guests. Recommend for healthy tasty eating.
