Umami, very rich
This is like a very thick syrupy glaze, mostly tastes like kikkoman soy, very nice, pretty salty. I learned something when I bought this: unagi (eel) sauce normally has no eel in it, it is used to glaze grilled unagi, and so it is sauce for the eel, not eel sauce. Great addition to many things though, drizzled on top or mixed in, just remember you are adding salt and a lot of flavor. I put it in Nissin Chow Mein noodles most often, because I add mushrooms and a kale leaf as well, and then they need a little extra sauce.

I tried the smaller bottle first to see if I would enjoy it. I enjoyed it so much that it didn't last too long: and I live alone! Great tasting product but not too salty and just a touch of sweetness. It definitely is on my reorder list. I have shared it with others and now they can order some in the future too!
