Can I use this for coffee (Cold brew & ice coffee)?

The stainless steel contact version would be fine for use with coffee. Nitro would require new taps, either way only use nitrogen to push coffee, CO2 can make it very bitter. If doing ice coffee from hot brew would recommend the japanese ice coffee method of brewing directly onto ice, or another flash chill approach, hot brewed coffee can stale quickly. Getting it free of oxygen as soon as possible after brewing also helps, though even with the best preparation cold brew will always outlast hot brewed.

Is tower compatable with a glycol draft system?

Not without added expense and trouble. It's designed to be air cooled, it doesn't have any glycol cooling blocks. For the kind of money these are, it's worth it to go for one designed for glycol cooling.

Can you change the tap handles?

Yes, they are standard screw on tap handles.

is this tower insulated ?

Yes it is insulated from the inside.
