Great Knife, Outstanding Performance with Proper Sharpening
This is a knife of excellent quality. The factory edge was standard, so I immediately proceeded to sharpen it with my Naniwa Chosera stones and achieved an exceptional edge, thanks to the quality of the VG-10 steel.The knife retains its edge for a long period of use. However, to fully take advantage of the steel's quality, it is recommended to sharpen it with stones of the appropriate grit and use the correct technique.

Most amazing knife
This is the knife I have been wanting for a long time. I bought one for a Christmas exchange and was so sad when someone picked it. They were excited. So, I went back and got this for myself.After several months of use this blade is still shape. I hand wash it and store it in the box.

Sharp & agile
My 2nd Tojiro knife, love how Iits sharp, thinner blade slides through any job. I wish I had found these 20 years ago

I love this knife. Perfect weight, perfect size.
I don't have real big hands and I needed something larger than a paring knife but smaller than butcher knife. I've had Wuesthoff knives for years and love them but this one has moved to the front of the line for all around utility knife.

Excellent little work horse!
This is the best little work horse I’ve had in a while. It’s a firm knife that can hold of to deboning along with a host of Garde mise. This one or the one slightly shorter would hold up well to this kind of work. Great product. Great steel.

It's REALLY sharp.
This is a fine petty knife and I do like it. I'd prefer a bit more handle with ergo curves to help anchor it in my hand better to avoid that bottom corner. It's really sharp too.

Great starter knife
Great entry into Japanese knives. Purchased this as a gift for a culinary student. It is a nice thin but durable blade. Two types of steel allows a hard edge for sharpness and softer core for strengthStays sharp for much longer than the german equivalent. Tojiro did amazing.

Razors are dull compared...
Have had the 8.3 inch DP Gyotu for 3 years and LOVE it, so I wanted something smaller for shallots and such. Well this is a miniature version of that knife - and it is just as sharp. Seriously, these tojiros can slice atoms off of molecules so be careful. I am very happy with this one, as it works perfectly for the smaller jobs...
