Not too hot, not too cold, .. just right! Calcium addition is not really temperature sensitive in the way that the clotting enzyme (rennin or rennet) step can be. Enzymes work faster as you warm the milk but don't go above body temp since that's where they evolved to be optimium. But milk clots at room temp , the enzyme just takes twice the time for every 10 degrees cooler the reaction is hld at.
