Adds rich flavor
I used this in a NYT recipe for chocolate chip cookies and it added such a yummy flavor to the dough. The first time I grated the piloncillo but it was a little too fine, although still delicious. The second time I cut the piloncillo in chunks and ran them through a food processor. Got just the right texture.

Over priced. Over rated flavor
Recommended in NY Times article with overly complicated recipe. Could have bought at Walmart for 1/4 of the price. Dark Muscovado far superior product
