Poor documentation
Bought this product to slice my home made bacon. I received the device and proceeded to put it to use on slicing 2 5# slabs of bacon I just finished. The bacon sat in the fridge for 24 hours before slicing to firm up the meet. There was no instructions on which blade to use for what application as well as any direction on how to process different types of meat. I started with the straight blade with very poor results. Then I put the meat into the freezer for 45 minutes and tried again. The slicing was still poor. I put the bacon back in the freezer for 2 hours and changed over to the curved blade. I set the stop bar so it was thicker then I normally slice my bacon. It was over 1/8 inch thick. I finally had success. But didn't get a chance to try to slice it thinner, I went through all the meet. I also tried cutting cured sausage and had the same poor results. When paying $180 for something you should have a manual that gives you some direction of uses.The other issue I have with the unit is the description of the unit says you can cut up to 13 inches long. This is very deceptive, the screws used to set the thickness stop only allows about 8 3/4 inches before the screws damage your meat with the bolt head. The item would have to be very thin, and only the straight blade will allow the 13 inch cut.In my opinion the blades aren't very sharp. A sharper blade would help the device to cut softer meats.I will try some more test before I decide to return this item.

Great product easy to set up and use cuts bones like butter and a lots quicker than anything i own

it does'nt cut meat bone, it cuts your hand, if not careful.
I tried to cut the short rib bones. It does not cut it. It will cut your hand, if not careful, My hand touched the blade, by misstate and cut my skin. In that anger, I put it in garbage. I don't want replete the mistake, once more.
