Super sharp. Definitely worth the money. This knife is efficient and easy to maneuver. Mercer knives are one of the best brands for professional entry level kitchen knives. Id suggest these over the kitchen block knives any day.

Processing meat is a breeze
If you want victorinox performance without paying the price, this is it.However, this is a stiff knife. I like it so far. Edge retention is good and can easily be sharpened using whetstone.Handle provides good grip. I have processed 20 pounds of beef in one go without any problem.

The boning knife is a good value.
I bought a boning knife in order to butcher (separate the parts) a chicken. It works very well, and I'm happy that I didn't spend 10x as much as I intended for the Zwilling Pro, although that is still on my list. In the meantime, the Mercer is an excellent substitute and will allow me to practice my boning skills. Out of the box the knife is very sharp and the grip is comfortable and slip resistant. It's an attractive knife, and a good choice to start with if you're learning how to become a more capable home cook, or don't want to spend a lot of money for a boning knife.
