In general -- Peg Compound is to allow you to turn the pegs to tune the instrument. This peg compound prevents the pegs from sticking to the instrument (while still holding the peg & tune in place). So I guess the short answer to your question is that peg compound prevents the pegs from getting too tight.

Q: do I have to unwind the strings and take the peg out to use this? -- sorry I'm new with the violin

yes,the every peg has to be removed for getting service with any peg compound. please,make the two rings around of every peg,do not touch the area where strings winding going to be ! with my pleasure.

Q: what's the difference between this and Hill the Original Peg Compound?

I don't know about the original one. The Hill peg in the tube, you rub it on the peg and when you wind up the string the Hill peg compound keeps the string from slipping. It doesn't take much on the peg. Hope this helped some.
