are these genuine Silpat or Chinese knock off's ?

Even if you don't directly grease the silpat, what about adding oil or cheese over veggies, won't this oil remain on mat?

I NEVER grease or oil the mat...Cookies,sticky buns do not stick( In fact being extra CAREFUL about pulling things out of the oven will be your new NORMAL !) I also use a casserole sized for things like baked macaroni and cheese..I slide it into a serving bowl and there is virtually NO cleanup....

I have a 141/4 X91/4 pan. What would be the proper size silpat for that pan?

I would suggest measuring the inside dimensions of the pan and buying the one closest to that size.

Looking for a quarter sheet silicone mat. Why is there no 9"x13" for quarter sheet pans?!

Order the Jelly Roll size. It is 8 1/4 by 11 3/4, that is what I use on my quarter sheet pans and it fits perfectly.
