Q: is this strong enough to take 250 degree F heat for 10 hours plus? as plan to use this to hang brisket in a smoking bbq barrel

Yes. Zinc doesn't melt until 419.5 F and steel doesn't melt until around 2500F. The heat in your smoker won't affect the integrity of the chain at all.

Ours not rusted but only used occasionally.

If you Google the model number, it's rated at 250kg, to be safe I wouldn't exceed 200kg.
