Hello Thank you for your query. the dosge for Potassium Sorbate is as follows:- Typical dosage for food applications is 0.25g to 1g per 1 kg. Do not use in in baked products containing yeast. For fruit drinks and wine the amount required depends upon the alcohol content (12% to 14% alcohol would require 0.07g per litre). Lower alcohol content would require more.

Could this be used to clean and inhibit mould on leather?

I have never tried it but it is used in very small amounts (100ppm I think) to inhibit mould growth in food stuffs
