What I was expecting
This came in and is what I was expecting. Not sure if I would like a slightly flexible boner, and this isn't it, but That is on me and I'm very happy with this one. Like all the Old Hickory knives, a little sanding on the handle and a good washing and oiling on both the handle and blade are in order. I have several Old Hickory knives and was heartbroken when they shut down production. Glad I got a good run knife.If you are thinking of getting one of the brand while they are still available, be careful. I bled every time I picked up my first one, it was great. They are all sharp, and I'm used to very sharp cutlery, but the angle of the bevel or something is a little different.

If u need a knife you can sharpen, then de-bone a turkey WITHOUT having to stop & re-sharpen, here ya go! Work GREAT!

Poor blade geometry
This was purchased to butcher deer in the garage. The handle is very rough, but this was never meant to be a fine blade. The item arrived sharp and touched up easily on a steel as expected. The blade is carbon steel so it WILL stain with use. Just wash and dry it when you're done to keep rust off. The staining is the tradeoff for ease of sharpening and edge holding.My only complaint is the edge geometry. The primary bevel is fine, if a little too low on the blade. The secondary bevel (the actual knife edge) has a ridiculously blunt angle. I think it's about 60 degrees inclusive. This would work much better with a steeper angle. I'm going to reprofile the edge to 30 degrees.If you plan on buying this, plan on reprofiling the edge and make sure to wash and dry it after use and it will work well for you.

Poorly constructed
The steel seems to be decent, but the construction is extremely poor. Definitely will not be buying another knife from them.

Sharp Knife!
I love Old Hickory knifes. They are well made, have a sharp cutting edge and are easy to sharpen when needed. I don’t like that the blades discolor but it happens with these knifes. However, that really doesn’t take away from how wonderful the knife is.

Great knife..!!
I use this to cut store bought meat to pressure can. Did have to sharpen and run across a razor strop to get sharpness to my liking. Well balanced. I wash it when I'm done, air dry, then spray with food grade silicone to prevent rust until I use it again.
